For a sweet version of this bread, mix 2 tbsp sugar with 1 tsp water in a small bowl, then sprinkle the surface of the bread just before baking.
To make your own millet flour, place 250 g millet into mixing bowl and mill 2 min/speed 10. Use as needed.
Add approximately 30 g chopped nuts or raisins in addition to reserved chopped chocolate.
For best results, use the brand 'Wooden Spoon' all purpose flour
Grate one piece of lemon peel with the Parmesan cheese in step one.
To test for proofing: place a small ball of dough in a glass of water and when it rises to the top the dough has finished proofing.
If you prefer, you can use activated or roasted almonds instead of raw almonds.
We used the poached pears to top our chocolate cake. Alternatively place in a sealable container in the fridge for up to 2 weeks. Serve with porridge, as part of a smoothie bowl, use as a pie filling or simply serve as a dessert with custard.

Adding lemon juice prevents the sugar from burning or crystallising, without affecting the flavour.
The time it takes to whip cream depends on the temperature of the ingredients and the fat content of the cream - the more fat it contains, the easier it is to whip and the stiffer the consistency it will achieve. The optimum temperature is 4-6°C. For better results, you can cool the mixing bowl.
