Named after ‘pancia’ , the Italian word for stomach, these delicious stuffed dumplings date back to the 18th century where they were a popular snack in Naples. Similar to a calzone but much smaller in shape, panzerotti were originally filled with a mixture of cheese and cooked meat, then deep-fried in lard and eaten hot. Today, this traditional preparation has changed very little. Ours are filled with ricotta cheese and sausage meat and make a moreish appetiser or snack with drinks.
Only use food grade peppermint oil in this recipe as it is designed for consumption; do not use essential oils. Food grade peppermint oil can be found at specialty food stores, specialty baking stores or online.

If preferred, make up to step 4 and assemble mille feuille just before serving.

Another impressive-looking showstopper of a dessert that has all the hard work taken out of it with Thermomix®. The almond meringue makes lovely light, crunchy layers.
When colouring the dough, use other colours such as yellow, blue and black, and add them in small amounts to a portion of the dough mixed with green dye to get visible differences in shades of green.
A square springform or casserole dish is particularly suitable for this folded bread.
You can use any berries in this recipe except strawberries. Due to their high water content, strawberries are not recommended as this will affect the setting and consistency of your jam.

Fill your croissants before baking with 1 tsp of jam or hazelnut spread in the centre of the triangles in step 4 before rolling.
If you cannot buy alkaline water, you can make your own alkaline water by using cooking baking soda. Cook 1 tsp baking soda and 100 g water in boil mode/ 100°C , then cook 2 minutes/100°C/speed 1 and let cool.
