For a sweet version of this bread, mix 2 tbsp sugar with 1 tsp water in a small bowl, then sprinkle the surface of the bread just before baking.
If rolls are not served warm, allow to cool completely on a wire rack, then transfer into a sealable container until ready to serve.
Once cooled, wrap tortillas in cling wrap and store in the refrigerator for up to one week.

To bake in a cast iron skillet: place 1 tbsp canola oil into a cast iron skillet (approx. 8 in.-10 in.) and place in the oven. Preheat oven to 425°F and continue making the batter. Carefully transfer batter from mixing bowl into hot skillet and bake 20-25 minutes (425°F) or until golden brown.

For our pizza we used smoked salmon, red onion, créme fraîche, watercress and capers as toppings.
To reheat: place each pretzel on a piece of foil large enough to completely wrap it. Add about 1 tbsp water per pretzel then wrap as tightly as possible. Set oven to 250°F and reheat approximately 20 minutes.
