Sticky date pudding

★ 4.91505

Individual steamed sticky date puddings: half-fill 12 lightly greased silicone cupcake moulds with mixture. Place into Varoma dish and onto Varoma tray (allow at least a 1-2 cm gap around the top of the cupcake moulds as the puddings will rise during steaming). Place 1500 g water into mixing bowl and place Varoma into position. Secure Varoma lid and steam 23-30 min/Varoma/speed 1, depending on the size of your puddings. Puddings are cooked when a wooden skewer inserted into the centre of a pudding comes out clean. Repeat with remaining batter in batches as required.

This dessert is designed to still have a liquid consistency in the centre. If you would prefer a more ‘molten’ consistency (slightly thicker), please see the Molten chocolate cake recipe here on Cookidoo®. Alternatively, for a more brownie-like consistency, see the Fudgey chocolate cake recipe. The same ingredients – three different options!

The time it takes to whip cream depends on the temperature of the ingredients and the fat content of the cream - the more fat it contains, the easier it is to whip and the stiffer the consistency it will achieve. The optimum temperature is 4-6°C. For better results, you can cool the mixing bowl.
