Refreshing and fragrant, homemade elderflower cordial is so much better and more pleasing than anything you can buy in the shops. The elderflower season is short, and falls in early summer, but makes a great excuse for long walks spent collecting flowers.
For alcohol-free fruit cakes, replace the brandy with black tea or orange juice and proceed as per recipe. An alcohol-free version should be stored in the fridge and consumed within 1 month.

Vanilla seeds can easily be removed from the vanilla pod; hold the pod at one end, slit with a sharp knife lengthwise, then scrape out the seeds with the tip of the knife.

For a grilled version, preheat grill to 300°F (low-med heat). Carefully unwrap steamed ribs, tightly wrap in foil and place racks onto grill. Cover grill with lid and cook 1 hour, flipping foil packet every 20 minutes to make sure the ribs are cooking evenly. Then carefully unwrap ribs and place directly onto grill and brush ribs with Stout Beer BBQ Sauce. Increase heat to medium and cook a further 15-20 minutes, uncovered, basting every 5 minutes with reserved BBQ Sauce. Remove from grill and tent or loosely cover with foil and let rest 5-10 minutes before slicing. Serve hot with additional BBQ Sauce.

The time it takes to whip cream depends on the temperature of the ingredients and the fat content of the cream - the more fat it contains, the easier it is to whip and the stiffer the consistency it will achieve. The optimum temperature is 4-6°C. For better results, you can cool the mixing bowl.
1 tsp homemade vanilla sugar is roughly equivalent to 3 tsp (0.5 oz) store-bought vanilla sugar.
- Serve the pears with sabayon (zabaglione) or a scoop of vanilla ice cream (refer to The Basic Cookbook for recipes) - You can store pears in wine in refrigerator for up to 7 days. - Pears can be preserved: add 300 g water in step 1, then in step 2 place the cooked pears in sterilised jars and pour the hot spiced wine into the jars to cover the pears. Seal the jars immediately and turn upside down for 10 minutes. Preserved pears can be stored refrigerated for a few weeks, and must be eaten within 7 days of opening the jar. - For a sweet-savoury combination, serve the pears in red wine with blue cheese, such as Gorgaonzola.
To prepare fresh pasta for short-term use: make pasta and then dry for approximately 30 minutes. Place pasta in plastic bags and refrigerate for up to 12 hours. To freeze the pasta, dry it completely before placing in bags. This can take several hours, but if the pasta remains moist, it’s possible for mold to form. Freeze the pasta for up to two months.
Flank steak is best eaten rare or medium rare for maximum tenderness.
Serve this sauce with salmon (e.g. gravlax, a Scandinavian dish of dry-cured salmon marinated in herbs) or boiled eggs.

Chocolate sauce needs to be at room temperature for dipping. Remove from refrigerator 1 hour before serving.
