Endive Salad, Ragù Pasta and Chocolate Mousse
The time required to whip cream depends on the temperature, fat content and quantity of cream. The higher the fat content, the easier it is to whip the cream to a stiff texture. Take care to not over whip or it will turn to butter. When the sound of the cream being whipped starts to change (approx. 30 sec.), check for doneness and continue to whip until desired consistency is achieved. Approximate whipping time is 1-2 minutes.
