Ras el hanout is a spice blend that originated in the Maghreb and combines many different ingredients. The composition differs regionally and from shop to shop. Usually around 25 different spices are used.
The number of oranges needed in this recipe will vary depending on the size of your oranges (you need approx. 250 g juice).
Use as a base for a tasty curry: combine Nyonya spice paste with curry powder, coconut milk and tamarind juice and add chicken, seafood, meat or vegetables as preferred.

You can place trays of unbaked gougères into the freezer. Once frozen, place into snaplock bags. To bake from frozen, place onto lined baking trays. Bake 220°C for 8 minutes, then reduce temperature to 190°C and continue to bake for 15-20 minutes until golden brown and cooked through.
If not used immediately, cover and store at room temperature. Gently reheat to use; to bring it back to a liquid consistency, stand jar in a bowl of hot water for a few minutes.
