The high temperatures of Thermomix® caramelise the red onions for a fuller flavour in this tasty chutney. Serve with goat’s cheese on crackers or crostini for a great canapé, or add to a cheese board.
Serve with cheese or as a condiment for meat or fish or with an Indian curry meal.
Fruit coulis are sauces or purées produced by blending fruit and cooking briefly.
Serve with rice pudding, pancakes, potato cakes or with roasted or grilled pork.
Setting point test: place a saucer in the freezer (5-10 minutes). Place 1 tsp jam onto the saucer. When cool, push jam with your finger. If it wrinkles, it is ready. If not, boil jam for a further 2 min/110°C/speed 3 , then test again.
Use 0.5 oz lemon juice if you are using cooking or mealy apples.
You can find coconut flesh (fresh and/or frozen) at most Asian grocers. If using frozen coconut flesh, defrost and drain before using.
To prepare jars, thoroughly wash jars and lids in hot, soapy water. Rinse by pouring over boiling water. Prepare for filling, if needed, by placing on a clean tea towel in a roasting tin and heating in the oven at 100˚C until required.
To marinate chicken, use a sharp knife to cut slits 1 cm deep into the chicken pieces- 3 slits per drumstick and 4 to 5 per thigh. Place the chicken in a large dish. Spread the marinade all over the chicken and leave to marinate for at least 12 hours in the fridge, but not more than 2 days . Bring chicken to room temperature before grilling on a BBQ or using the grill setting on high in your oven. Turn the chicken as often as needed to prevent burning but allow it to develop a dark char for maximum flavour.
If some caramelised onion sticks to the bottom of the mixing bowl, in the next step, the vinegar will dissolve it almost completely.

This recipe is a favorite of Diamond Club Member, Vanessa Musi . We make a gluten free lasagna using this tomato sauce recipe. We add the desired grated cheeses to make the lasagna and convert this simple sauce into a Bolognese. After sauteing, add tomatoes, sugar, salt and basil into mixing bowl. Insert simmering basket, weigh in 24 oz ground turkey and cook 15 min/212°F/speed 2 . Stir turkey with spatula to break up and ensure even cooking, then cook 15-20 min/212°F/speed 2 or until cooked through. Transfer cooked ground turkey and sauce into a large bowl and stir to combine, then use as desired.
When filling the jar, make sure both the jar and the jam are hot to prevent cracking.
After opening, store chutney in the refrigerator for up to 6 months.
Fresh chillies come in different strengths. Removing the seeds will tone down the spiciness.
Blackberries make a really lovely autumn jam, especially if you’re able to make it using the huge glut of fruit found at this time. It’s always extra satisfying, too, to make a jam out of fruits you have picked yourself!

Fresh tomato sauce: instead of chopped tomatoes, use 800 g fresh plum tomatoes, quartered. After adding the ingredients in step 2, chop 15 sec/speed 5 and proceed with recipe, extending cooking time to 30 minutes .
This apple sauce is so quick and easy to make, you won’t want to buy a jar of it again. Lovely with ham or roast pork – or our pulled pork and cider rolls. This sauce keeps well, and can also be frozen, so is a great one to make in the autumn when apples are in season.
To ensure preservation, clean jam jars thoroughly in hot soapy water. Rinse by pouring boiling water over them. Prepare for filling by placing clean jars in a baking pan and heat in oven at 212°F until required. Pour jam into jars while jars are still warm.
