Gluten-Free Date, Apple and Walnut Tea Bread

★ 5.01 ratings

Psyllium, or psyllium husks are the ground husks of the seeds of Plantago ovata, an herbaceous plant. It gives gluten-free doughs more volume and elasticity, contributing to a spongier crumb texture. It acts on doughs in the same way as guar gum or xanthan gum with better results. Not suitable for people allergic to egg proteins or nuts. Never buy in bulk (pulses, cereals, spices, seeds, flours, etc.) due to risk of cross contamination.
