Paris Brest

In 1891, a pastry chef was asked to create a dessert to promote the bicycle race from Paris to Brest, on the Normandy coast in France. The pastry, in the shape of a bicycle wheel, filled with cream piped into the pastry with a fluted pastry tip to mimic the spokes of a bicycle wheel, has since become one of France's most iconic desserts.
