There is no need to miss out on ice cream when you have a Thermomix®! This vegan version is made with delicious sweet strawberries and can be whipped up in seconds, meaning you’re never far away from a frozen treat. Other frozen fruits can also be used such as bananas or mangoes.

To freeze fresh fruit, peel, remove seeds and cut flesh into pieces. Place fruit pieces on a tray and freeze 1-2 hours or until firm. Use immediately or transfer to freezer bags for later use.

You can substitute firm brown pears for red pears. Traditionally brown and red pear varieties such as Beurre Bosc, Corella and Red Sensation are used when poaching however; the more commonly available Williams pear can also be used in this recipe.

Lollipops start with the simple combination of sugar and water, which is made into a syrup then heated to a specific temperature to reach the hard-crack stage. They can be made with different shapes, using moulds or simply pouring the syrup on to an oiled or lined surface to set.
Cut the bananas into slices (6 mm), place them in a freezer bag in a single layer, and transfer to the freezer to freeze overnight.
Store the balls in the fridge for up to 2 weeks.
