Refreshing and fragrant, homemade elderflower cordial is so much better and more pleasing than anything you can buy in the shops. The elderflower season is short, and falls in early summer, but makes a great excuse for long walks spent collecting flowers.
If fresh figs are not in season, replace with dried figs cut into halves.

The cinnamon stick can be replaced by 2-3 cloves, 2 crushed cardamom pods or 1 vanilla stick, cut lengthwise in half, each time obtaining a different flavour note.
You can use a mix of macadamias and cashews (140 g nuts in total) in this recipe.
If a nut milk bag is unavailable: strain Raspberry Liqueur through a fine-mesh sieve lined with several layers of cheese cloth.

Freeze jalapeño slices in advance, spread sliced peppers on a cookie sheet and freeze for 1 hour. Place sliced jalapeños in freezer bags, remove as much air as possible and seal for future use.

To serve, pour 3-4 ounces cold brew and if desired dilute with filtered water and ice. For a stronger coffee use the dilution proportions of 1:1 coffee and water and for a stronger brew use 2:1 coffee to water. Serve with milk and sweetener of your choice.
