Refreshing and fragrant, homemade elderflower cordial is so much better and more pleasing than anything you can buy in the shops. The elderflower season is short, and falls in early summer, but makes a great excuse for long walks spent collecting flowers.
If the specific herbal tea is unavailable use one that has similar ingredients.
For best results use ripe fruit. If fruit is lacking in flavor, add the optional sugar.
Hot Chocolate : place 1 recipe (39 oz) Nut Milk into mixing bowl and heat 8 min/185°F/speed 1 . Add 8 oz dark chocolate, in pieces and 1 oz agave or 1 oz maple syrup and mix 30 sec/speed 3 . Transfer Hot Chocolate to mugs and serve.
The cooled drink can be stored in the refrigerator for up to 3 days and reheated immediately before serving.
For added flavor and thickness, use 4 oz masa harina instead of 2 oz.

For a spicy alternative, replace Mexican chocolate with artisanal Oaxacan chocolate.
For a frozen treat in summer, pour juice into icy pole moulds and freeze.
Replace strawberries with any other fruit such as raspberries, apricots or bananas.
Reserve pears to serve with cream or ice cream. They also make a lovely topping for rice pudding.
Choose smaller lemons with smooth shiny peel, as these are juicier and have less white pith.
For a delicious non-alcoholic version, simply omit the dark rum.
Whilst it was traditionally used as a medicinal drink for colds and flus, we can’t vouch for any of those claims. However, when the rain is pouring down outside and the windows are tightly shut, there’s little better than one of these warming drinks with a cube of crystallised ginger.
Replace calamansi with 2 lemons, cut into quarters and turbo for 2 seconds/1 time
For a non-alcoholic version, simply omit the liqueur.
When the sound of the cream being whipped starts to change (approx. 1 min.), check for doneness and continue to whip until desired consistency is achieved. The time required to obtain a stiff consistency for whipped cream depends on the temperature of the cream, its fat content and the amount of cream used. After 1 minute, check every 15-20 seconds to avoid overwhipping. Approximate whipping time is 1-2 minutes.
If fresh figs are not in season, replace with dried figs cut into halves.

Start pouring your water in a slow circular motion. Pour about half your water to start, then let the water level drop a little and refill. This may take a little practice, because you don’t want all the water to drip through too fast or too slowly. If the water level starts to come close to the top of your brewer while pouring, slow down your pour or pause briefly to avoid an overflow.
